Malic acid:
Malic acid, also known as 2 - hydroxy succinic acid, has two stereoisomers due to the presence of an asymmetric carbon atom in the molecule. There are three forms in nature, namely D malic acid, L malic acid and its mixture DL malic acid. White crystalline or crystalline powder with strong moisture absorption, easily soluble in water and ethanol. Have a special pleasant sour taste. Malic acid is mainly used in food.
Application:
1. L-Malic acid mainly used as sour agent for food andbeverage, especially for jelly and fruit-based food and beverage. It has thefunction of maintaining the color ofnatural fruit juice.
2.DL-Malic acid mainly used in refreshing beverage (such asLactobacillus beverage, milk beverage,soda, cola), frozen food (fruit dew, icecream, etc.).
Uses also include as raw materials forpharmaceuticals, cosmetics, dentallotions, metal cleaners, buffers,coagulants in textile industry, andfluorescent whitening agents forpolyester fibers.
