5. Performance: Transparent crystal or white coarse powder, odorless. It has a cool and salty taste. Easily deliquescent, soluble in water or glycerin, almost insoluble in ethanol. Relative density 1.98. Melts and decomposes when heated to 230°C.
6. Uses: Used as buffers, chelating agents, stabilizers, antioxidants, emulsifiers, flavorings, etc. in the food industry.
