5. Performance: Transparent crystal or white coarse powder, odorless. It has a cool and salty taste. Easily deliquescent, soluble in water or glycerin, almost insoluble in ethanol. Relative density 1.98. Melts and decomposes when heated to 230°C.

6. Uses: Used as buffers, chelating agents, stabilizers, antioxidants, emulsifiers, flavorings, etc. in the food industry. It can be used for milk and dairy products, jelly, jam, meat, canned hydrogel snacks, emulsification of cheese, preservation of citrus, etc. Used in the pharmaceutical industry for hypokalemia and potassium deficiency and for alkalizing urine.

Potassium Citrate is a potassium salt of citric acid with the molecular formula C6H5K3O7. 
Potassium Citrate is a white, slightly hygroscopic crystalline powder. 
Potassium Citrate is odorless with a saline taste.
As a food additive, potassium citrate is used to regulate acidity and is known as E number E332. 
Medicinally, Potassium Citrate may be used to control kidney stones derived from either uric acid or cystine.
