Function and Application of Dl-tartaric Acid :
Function of tartaric acid:
1.Dl-tartaric Acid is colorless transparent prismatic crystal or white fine to coarse crystalline powder. It has aromas of grapes and white lemon. Dl-tartaric Acid CAS 133-37-9 tastes sour. Stable in air. No moisture absorption. The acidity is about 1.2 ~ 1.3 times that of citric acid. Soluble in water, insoluble in chloroform.
2.Dl-tartaric Acid can be used as sour agent, antioxidant synergist, flavor enhancer, quick acting bulking agent, acidic substance, edible pigment dilution and curing agent. Dl-tartaric Acid is widely used in food, chemical industry, light industry and other industries.
3.Dl-tartaric Acid can enhance the aroma of wine, but Dl-tartaric Acidis weaker than citric acid. It is generally used with other organic acids such as citric acid or malic acid.
Application of tartaric acid:
1.Dl-tartaric Acid is mainly used to manufacture tartaric acid salts. Dl-tartaric Acidis used as beer foaming agent, food sour agent, flavoring agent and sour agent of grape juice in the food industry.
