5. Performance: White monoclinic crystalline powder, odorless and tasteless, soluble in dilute hydrochloric acid, nitric acid, slightly soluble in water, insoluble in ethanol. The relative density is 2.32, which is stable in air. It starts to lose water at 75ºC to form calcium hydrogen phosphate.

6. Usage: Used as loosening agent, dough improver, buffering agent, nutritional supplement, stabilizer, emulsifier, stabilizer, etc. in the food industry. For example, it can be used as a leavening agent for flour, cakes, pastries, and baked products, a compound bread modifier, and a fried food modifier. It is also used in biscuits, milk powder, cold drinks, and ice cream powder as a nutritional supplement or quality improver.
